Jalapeno Margarita

Ingredients:

tequila, triple sec, lime juice, salt, cayenne pepper, sugar, jalapeno pepper

Instructions:

Take half of a jalapeno pepper no larger than your thumb and remove the stem and all seeds. Drop in the bottom of a shaker and muddle with 1.5 oz fresh lime juice. Then add ice, followed by 4.5 oz tequila, and 3 oz triple sec. (The proportions are 3-2-1, tequila, triple sec, lime.)

Shake well and pour into a chilled cocktail class that has been rimmed with kosher salt, a touch of cayenne for color and a little added bite, and a touch of sugar to get a sweet-salt power struggle going on on the rim of your glass.

I like leaving a couple of seeds in the shaker as well. But be careful as they can make this cocktail really hot. Also, be sure to throughly wash your hands with soap before touching nose, eyes, or...just wash your hands...
