One-Hour Whole Wheat Bread

Ingredients:
3 cups whole wheat flour
2 oz. milk
2 oz olive oil
1-1/2 tbsp sugar (white or brown)
1/2 tbsp salt
1 tbsp yeast
Instructions:
You don't need no stinking bread maker to do this and you can have a hot loaf of bread, start to finish, in just over an hour. I modified the original recipe which was given to me by Eric Kaye.
Sieve the flour, and mix dry ingredients together well in a large mixing bowl.
Add 10 oz of very warm water (not too hot, as you will kill the yeast, which likes to be blood temperature), add 2 oz milk and 2 oz olive oil and knead for 8 – 10 min to make a suitable dough.
Add flour as you knead to keep from it being sticky on the outside. Keep hands coated in flour.
Place in lightly olive-oiled bowl, rotate dough a few times to cover with oil and then cover with plastic wrap. Place in warm, draft-free place for at least half-hour. Dough should double in size. (Optional) If second rising is desired, return dough to counter and knead a few times and then return to bowl and cover with plastic wrap. Or just punch dough down in bowl and rewrap.
Place in bread tin and bake at 365 for 30 minutes - until browned on outside. You can pull it out to check the bottom and still slide it back in for another few minutes if necessary.
