Marinade for grilled flap steak

Ingredients:
2/3 cup maple syrup
1/2 cup soy sauce
1/3 cup OJ
3 whole scallions
1 cherry-sized lump of ginger
Instructions:
Combine maple, soy & OJ and begin to reduce. Add grated ginger and continue to reduce until 1/3 is reduced. Turn off heat and finely slice both green and white part of scallions. Add to marinade. While letting marinade cool, beat your meat. Pound until tender and then place in ziplock bag and add marinade after cool.
(To speed marinade, let sit unrefrigerated for an hour before cooking.)
This is enough for 3 pounds of steak.
