Aji (Colombian Style Hot Sauce)

Ingredients:
5 jalapenos, stemmed
2 tablespoons water
2 tablespoons white vinegar
2 tablespoons fresh lemon juice
3/4 cup finely chopped scallions
1/2 cup finely chopped cilantro (stems ok)
kosher salt to taste
Instructions:
Combine the jalapenos, water, vinegar and lemon juice in a blender and puree until smooth. Transfer the mixture to a bowl and stir in the scallions and cilantro. Season with salt to your liking.
